Moms Fritters

2 eggs
1/2 cup milk
1 cup flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon vegetable oil
Fruit or vegetables ( we especially, like canned corn)
Beat eggs and add milk. Sift together flour, salt, baking powder and mix in milk and eggs. Beat in oil. Dip large fruits or vegetables in mixture and deep fat fry. OR Mix 1 cup small fruits or vegetables (drained) in batter, drop by a tablespoon and pan fry to a golden brown.

Cream Puffs

1stick oleo
1/4 cup water
1 cup flour
4 eggs
Melt oleo in water over medium. Add 1 cup flour and stir until it forms a ball. Next add one egg at a time and beat well (until dry). Drop by tablespoon on a greased cookie sheet. Bake 1 hour at 400 degrees. Fill with custard or pudding. Sprinkle top with powdered sugar. Makes approximately 16.

Pumpkin Pie Cake

4 eggs
1 1/2 cups sugar
2 cans pumpkin ( about 32 ounces)
2 cans Milnot or Pet milk (about 13 ounces)
2 sticks oleo
1 1/2 Tablespoons pumpkin pie spice
2 or 3 tablespoons cinnamon
1 boxed white cake mix
1 cup pecans broken up
Grease and flour a 13 x 9 inch pan (not glass). Beat eggs, next add in the sugar, salt, spices and pumpkin and mix well. Next, add the canned cream and stir. Pour into the pan. Sprinkle the pecans over the top of the mixture. Melt oleo and drizzle over the entire mixture.
Bake at 350 degrees for 1 hour and check it - it is done when a wooden tooth pick inserted into the cake comes out clean. Serve with Cool Whip or etc. Very Good.

Jell -O Popcorn Balls

1 box Jell-O 3oz. (any flavor)
1 cup corn syrup
1 cup sugar
1 cup unpopped corn
Pop corn - set aside. Mix remaining ingredients and bring to a boil. Pour over the popcorn. Let cool a few minutes and form into balls. Makes about 1 dozen popcorn balls. It is great to pick the color of jell-o to match the event - orange for Halloween - red or green for Christmas - etc. All flavors tastes good.
